Lemon Garlic Shrimp Pasta

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Pat the shrimp dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear the shrimp 1-2 minutes per side until pink. Remove and set aside.
  3. Lower heat to medium. Add butter, garlic, and red pepper flakes; cook 30-60 seconds until fragrant — don't let the garlic brown.
  4. Add lemon zest, lemon juice, and a splash of reserved pasta water. Toss in the pasta and shrimp until glossy and coated, adding more pasta water as needed.
  5. Finish with parsley, taste for salt, and serve immediately.
