Lemon Garlic Shrimp Pasta

Ingredients
- 12 oz spaghetti or linguine
- 1 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 2 tbsp butter
- 1 lemon (zest and juice)
- 1/4 tsp red pepper flakes
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1/2 cup pasta water, then drain.
- Pat the shrimp dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear the shrimp 1-2 minutes per side until pink. Remove and set aside.
- Lower heat to medium. Add butter, garlic, and red pepper flakes; cook 30-60 seconds until fragrant — don't let the garlic brown.
- Add lemon zest, lemon juice, and a splash of reserved pasta water. Toss in the pasta and shrimp until glossy and coated, adding more pasta water as needed.
- Finish with parsley, taste for salt, and serve immediately.
